The Samaritan Soup Kitchen serves good food along with
hope and healing each day. Soup Kitchen volunteers not only
bless our Ministry by being here, they know how to add a
pinch of this and a dash of that to make the food turn out
Each month, Samaritan Ministries will post a "recipe
of the month". These are not only Samaritan Soup Kitchen
staples, but some of the favorite home-cooked recipes of
our volunteers and guests.
The Soup Kitchen recipes will be large quantities, a perfect
measure for Church socials or other large group meals. Whenever
possible, we'll take the same recipes and give them to you
in a more manageable quantity as well. Enjoy the recipes,

December 2003 and January 2004 - Lemon Squares
Our Soup Kitchen Sponsor for the month of December is R.J. Reynolds Tobacco Company. RJR is underwriting all the food purchases in the Soup Kitchen during the month, and organizing volunteers to serve in the Soup Kitchen as well! This recipe for Lemon Squares was submitted by Vivian Turner, who recently retired after 18 years at RJR. Most recently, Vivian served as the Director of Community Affairs. She also served as President of the RJR Foundation. Vivian has been making this recipe for about 30 years. When her children were young, they would help her make the lemon squares - now her granddaughter pitches in to help! We wish Vivian a happy and blessed retirement. And thank you to all the employees of RJR for your support of Samaritan Ministries during our two-million meal celebration month!
1 box lemon cake mix
1 stick butter or margarine
1 box powdered sugar
1 tsp vanilla flavoring
1 8 oz pack cream cheese
2 tsp. lemon flavoring
Mix cake mix, butter and 1 egg. Press into 9 x 13 inch nonstick pan. Mix remaining ingredients and pour over cake mix. Bake at
350 degrees for 30-40 minutes. Let cool and cut into squares.
